The Loose Women star said this dish is "full of flavour" and easy to prepare
ITV's Loose Women presenter Ruth Langsford has taken to Instagram to share one of her favourite recipes, a Chicken Dhansak inspired by Slimming World.
At 65, Ruth is all about flavourful yet straightforward dishes that are perfect for hosting loved ones. She wrote on Instagram: "One of my go-to recipes: Chicken Dhansak, from an old Slimming World clipping I've had tucked away for years. It's quick, easy to throw together, and full of flavour. Proper comfort food. I love cooking for friends, and this one always goes down a treat.
"I loosely follow the original recipe, but I never stick to it exactly. It's more of a guide than a rulebook. I just measure with my heart and tweak things depending on what I've got in the fridge. If you fancy giving it a try, there are plenty of recipes online you can use as a starting point. Make it your own... that's the best part.".
To kick off her culinary creation, Ruth spritzed a bit of sunflower oil into a sizzling pan and sautéed diced chicken breasts until they were slightly browned. She then transferred the chicken to a separate bowl to rest.
Continuing with the same pan, she tossed in a bag of frozen chopped onions, letting them caramelise to perfection. In the meantime, she prepared some green chillies and grabbed a handful of frozen pineapple from the freezer
Ruth added: "Right, so I'm going in with the garlic puree and a big splodge of ginger puree. Then you are cooking that off. So, we're going in now with our spices - garam masala and curry powder. I don't really measure things very often, I just cook.
"And then just coat the chicken. [Add chopped] tomatoes, all the juice that's in that tin."
The chillies were then also included in the mixture along with Knorr chicken stock and an entire tin of lentils.
She added: "I'd say this will easily feed four people or two greedy people-one of them me. [Add] bay leaves, lid on."
Following that, Ruth tossed in the chopped pineapple and let the delicious blend simmer away.
She said: "Feeling fabulous is not just about looking fabulous. Ruth served the curry with some fluffy rice and added: "It's feeling good, cooking fabulous food, having fabulous friends, and I just love cooking for my friends.
"And there you have Chicken Dhansak, but the Ruth version."
Ruth finished her cooking display which attracted a raft of comments from followers, many eager to give the recipe a whirl.
A follower commented: "Thanks Ruth, gonna do this tomorrow for my wedding anniversary," while said: "Yummy. Going to try. So stuck in a rut with cooking the same things."
And a third person added: "I would probably eat all of that myself."
